Green, unripe olives variety Koutsourelia in brine with organic thyme and lemon.

In October, when the olives variety Koutsourelia get the proper green color, we choose our better trees and collect the olive crop by hand. We are very careful because we must not harm the olives at the process of harvesting. Then the olives get selected (?) and after that we keep them in special barrels in water with salt, thyme and lemon.

This variety produces a high quality and very tasty olive oil.

We suggest you to try it along with your meal or your drink.

After the opening the olives must be placed in brine (water with salt) or in olive oil so to keep their green color.
